Protein-Packed Veggie Egg Rice Wraps

Protein-Packed Veggie Egg Wraps are a nutritious, crunchy, and delicious blend of fresh vegetables and scrambled eggs, encased in delicate rice wraps. Perfect for a quick and healthy meal, these wraps offer a satisfying balance of protein and veggies in every bite.


Ingredients:

  • 2 large eggs
  • 1/8 cup chives, chopped
  • 1/8 cup bell peppers, diced
  • 1/2 packet Millie's Delight Pho Sipping Broth
  • 2 rice wraps

Instructions:

  1. Prepare the Eggs:

    • In a bowl, scramble the eggs.
    • Heat a non-stick skillet over medium heat , add one rice wrap and cover with the eggs. Cook the scrambled eggs until just set. Set aside.
  2. Add the veggies over the egg and sprinkle the Millie's Delight Pho Sipping Broth

  3. Lift the egg in rice wrap up, place another rice wrap on the skillet and flip the cooked part over on top of the new rice wrap
  4. Cook until crisp

  5. Place the wrapped rolls on a plate, cut and serve


Tips:

  • For added flavor, you can include other vegetables such as shredded carrots, cucumbers, or avocado slices.
  • Serve with a side of your favorite dipping sauce like soy sauce or a spicy sriracha mayo for an extra kick.
