Charred Tomato-Pepper-Broccoli Salad

Ingredients

  • Small peppers (any color)
  • 1 pint cherry tomatoes
  • 1 head of broccoli, cut into florets
  • Olive oil, for drizzling
  • 1 packet of Millie's Tomato Basil Sipping Broth
  • Salt and pepper to taste

Instructions

  1. Prepare the Vegetables:

    • Peppers: Drizzle them with olive oil and a pinch of salt and pepper.
    • Broccoli: Blanch the broccoli florets in boiling water for 2-3 minutes until they are bright green and slightly tender. Drain and set aside.
    • Cherry Tomatoes: Leave the cherry tomatoes whole, drizzle with oil
  2. Grill the Vegetables:

    • Preheat your grill to medium-high heat.
    • Place the peppers and cherry tomatoes directly on the grill grates. Grill the peppers for about 5-7 minutes on each side, until they are tender and have nice grill marks. Grill the cherry tomatoes until they are blistered and slightly charred.
    • Add the blanched broccoli to the grill for the last 3-4 minutes, turning occasionally until lightly charred.
  3. Combine and Season:

    • Once the vegetables are grilled, place them in a large mixing bowl.
    • Open the packet of tomato basil sipping broth and sprinkle it over the vegetables.
    • Drizzle with extra olive oil and toss everything together until the vegetables are well coated with the seasoning.
  4. Serve:

    • Transfer the charred vegetables to a serving platter.
    • Serve immediately and watch as everyone goes crazy over the amazing flavor.
