- 4 medium sweet potatoes
- 2 tbps olive oil
- Salt and pepper
- 1 tbsp of butter
- 1/3 cup of coconut milk
- 1 Millie's Delight Pho Broth Bag
- 1 tsp of curry powder
Pre heat the oven to 450 degrees F. Dice the sweet potatoes into 3/4 inch chunks. Lay evenly on a roasting pan and sprinkle with olive oil. While potatoes are cooking, combine all the ingredients for the sauce in a bowl.
Before serving the potatoes, drizzle the sauce over the top and toss. Salt & pepper to taste.
