Rainbow Rice Noodle Bowl

This dish features soft, silky rice noodles layered with a spectrum of crisp vegetables like bell peppers, sprouts, and mint. It's drizzled with a tangy, slightly sweet dressing that brings a lively burst of flavor to every bite.

Ingredients:

  • 200g rice noodles
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup bean sprouts
  • 1/4 cup fresh mint leaves
  • 1 tsp sesame oil
  • 3 tsp soy sauce
  • 1 packet of Millie's Delight Pho Sipping Broth
  • 2 tbsp rice vinegar (optional)
  • Chives for garnish

Instructions:

  1. Cook the Rice Noodles:

    • Boil a pot of water. Add the rice noodles and cook according to the package instructions until soft and tender.
    • Drain the noodles and set aside.
  2. Prepare the Vegetables:

    • While the noodles are cooking, prepare the bell peppers by slicing them thinly.
    • Rinse the bean sprouts and mint leaves.
  3. Make the Dressing:

    • In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, grated ginger, and minced garlic.
    • Open the packet of Millie's Delight Pho Sipping Broth and use about 3/4 of it, mixing it into the dressing.
  4. Assemble the Bowl:

    • In a large bowl, combine the cooked rice noodles, bell peppers, bean sprouts, and mint leaves.
    • Pour the dressing over the top and gently toss to coat all the ingredients evenly.
  5. Garnish and Serve:

    • Garnish with fresh chives.
    • Serve immediately and enjoy the vibrant, refreshing flavors of your Rainbow Rice Noodle Bowl!
